Serves 3 or 4

Ingredients:

4 teaspoons cornstarch

1 teaspoon paprika

1 teaspoon salt

1 pound orange- or yellow/white-fleshed sweetpotatoes, or a combination, cut lengthwise into 3/4-inch wedges, wedges cut into 3- to 4-inch lengths

2 tablespoons olive oil

3 tablespoons buffalo hot sauce, plus more for serving

3/4 cup blue cheese dressing

2 teaspoons chopped fresh chives or thinly sliced scallions

Celery sticks, for serving (optional)

Instructions:

  1. Preheat the oven to 500°F or the air fryer to 450°F.

  2. In a small bowl, combine the cornstarch, paprika, and salt. In a large bowl, toss the sweetpotatoes and olive oil. Add the cornstarch mixture and toss to evenly coat. Transfer to a large rimmed baking sheet and oven bake for 10 minutes or transfer to the air fryer basket and air fry for 5 minutes.

  3. Toss the sweetpotatoes and continue to cook until browned, crisp, and dry, about 10 minutes in the oven or 5 minutes in the air fryer.

  4. Transfer the sweetpotatoes to plates or a platter. Drizzle with the buffalo sauce and sprinkle with the chives. Serve with the blue cheese dressing, celery sticks, if using, and more hot sauce on the side.
